This Electrodialysis machine applies a membrane-based electrodialysis process to adjust the ionic (mineral) concentration of wine. This new machine will perform the following processes:
- Cold stabilisation (potassium bitartrate instability)
- Calcium instability
- Salt reduction
- pH adjustment
- SO2 reduction
This is a low energy, inline process using different applications of the same fundamental deionisation process. The new Electrodialysis machine has been designed and manufactured in Australia by VAF Memstar and will be available for hire from December 2020.
How does it work?
Wine passes through the plant and in the process, it is deionised to an extent based on its measured change in conductivity. A value for this target conductivity is set and the control system maintains this automatically. In general, the greater the degree of deionisation, the slower the rate of treatment. The overall rate is estimated to be about 6,000 litres per hour, based on a nominal deionisation rate of 20%.
